Chocolate Cherry Breakfast & Trail Cookies

1 cup unbleached flour or finely ground oats

3 cups oatmeal (old fashioned or quick cooking)

¼ cup ground flaxseed

1 tsp. baking soda

½ tsp. salt

1 tsp. cinnamon

2 eggs

3/4 cup honey or real maple syrup

1/2 cup melted butter or coconut oil

½ cup unsweetened applesauce

1 Tbsp. vanilla

1 cup finely grated zucchini

1 cup chopped pecans

1 cup dried cherries or cranberries

1 cup bittersweet chocolate chips

Whisk together flour, oats, soda, ground flax, salt and cinnamon. In a separate bowl, combine eggs, honey, melted butter, applesauce and vanilla. Combine dry ingredients with egg mixture. Stir in zucchini, pecans, cherries and chocolate chips. Let mixture sit for 20 minutes. Preheat oven to 375 degrees. Drop by level ¼ cupful onto greased baking sheets. Bake until lightly browned on the bottom, about 12-15 minutes. Makes 2 ½ -3 dozen.
