Gluten-Free Chocolate Chip Cookies

Ingredients

1 cup almond butter
2/3 cup dark brown sugar or coconut sugar
1 egg
1 tsp. baking soda
1 1/2 tsp. vanilla extract
1 cup semisweet or bittersweet chocolate chips

Directions

Preheat oven to 350 degrees. Beat together almond butter, sugar, egg, soda and vanilla until combined. Stir in chocolate chips. Drop by rounded teaspoonful onto baking sheets and bake for 8-10 minutes until bottoms are lightly brown. Cool. Makes about 20-24 cookies.
