Grilled Avocados

2 ripe avocados
1 Tbsp. olive oil
1 cup chopped tomatoes
2 Tbsp. basil, chopped
¼ tsp. salt
¼ tsp. pepper
¼ cup crumbled feta cheese
½ lemon

Halve avocados and brush with olive oil. Place on hot grill, cut side down, and grill until grill marks appear and avocados are heated through. Meanwhile, toss tomatoes, basil, salt and pepper. Add feta. Fill each avocado with tomato/feta mixture and add a squeeze of lemon. Serve immediately. Makes 4 servings. NOTE: Grilled avocados are also delicious filled with fresh or jarred salsa.
