Pineapple Inside-Out Donuts

The next time you’re in the mood for something sweet around the campfire, try one of these delicious treats from California camper Donna Mitchell. It’s a delicious take on a traditional pineapple upside down cake!


  • 6 plain cake donuts, sliced in half sideways, like a bagel
  • 6 slices of pineapple, in their own juice
  • Brown sugar
6 aluminum foil pieces


Place one half donut on a piece of foil
. Top with pineapple slice
. Press 2-3 Tbsp. Brown sugar on top of the pineapple
. Place other half of donut on top
. Wrap securely in foil.

Place on grate over hot coals, or on preheated grill
. Cook about 10 minutes, turn over, and cook another 10 minutes. 
 Brown sugar
 should be melted – if not, rewrap and cook a few minutes more.

Unwrap and eat – warning they might be hot.

I have used powdered [donuts] if plain aren’t available,” Donna said. She also suggested using Stevia to reduce the total amount of calories

    A resturant in our area makes a chocolate pineapple upside down cake. It is yum, yum. So try this recipe with a chocolate donut!

    You can also use a tube of Pillsbury cinnamon rolls (lg. size). Pre-prepare at home: on a square of foil, pat of butter in the middle, sprinkle of brown sugar on that, then the pineapple slice, and finally one raw cinnamon roll on top, upside down. Gather corners of foil and twist together tightly. Make several packets, place in a large zipper bag and put in your cooler or fridge. When ready to eat, place them flat side down on the campfire grill, either side of the fire (not over the top). Cook about 12-15 mins., depending on how hot the fire is (you should hear sizzling butter). When you pull them off, let them sit a couple minutes, as they’ll be hot, then tear the top twist of foil off carefully, lay a plate on top, and flip over; lift the rest of the foil off carefully, and enjoy!

    We used to make these at Camp Fire Girls camp over 40 years ago, but we called them “Hawaiian Donuts”. They are fantastic, and we still make them whenever we go camping.
