Slow Cooker Turkey Cowboy Chili

Ingredients:

  • 2 Tbsp. olive oil
  • 1 pound ground turkey
  • 1 red or green bell pepper, chopped
  • 3 stalks celery, chopped
  • 1 large yellow onion, chopped
  • 3-4 cloves garlic, minced
  • 1 large (28 oz) can diced tomatoes
  • 1 quart turkey, chicken or beef stock
  • 2 Tbsp. chili powder
  • 1 Tbsp. cumin
  • 1 tsp. oregano
  • 1 tsp. salt
  • ½ ts. pepper
  • 3 cans pinto, black or kidney beans (or a mixture of all three)
  • Shredded cheese & chopped onion, for garnish

Directions:

Heat the oil in a large sauté pan and cook turkey, pepper, celery, onion and garlic until veggies are tender and meat is browned, about 8-10 minutes. Add spices and cook another minute. Add turkey mixture to crock pot with tomatoes, stock and beans. Cook on low for 6-8 hours or on high for 3-4 hours. Salt and pepper to taste. Serve with shredded cheese, chopped onion, corn chips, etc.

Serves 6-8.
